Mustard: The Oil of North and East India

Mustard, or sarson, is the main oilseed of North and East India. Its sharp, pungent kachi ghani oil is the cooking oil of Punjab, Uttar Pradesh, Bihar, Bengal and Odisha, and its winter fields of yellow flowers are a symbol of rural India.

Where Mustard Is Grown

Rajasthan grows the largest share, in Alwar, Bharatpur, Sri Ganganagar, Hanumangarh, Tonk, Sawai Madhopur and Jaipur. Haryana (Rewari, Mahendragarh, Bhiwani, Hisar), Madhya Pradesh (Morena, Bhind, Gwalior), Uttar Pradesh (Agra, Mathura, Etawah) and West Bengal are the other big growers.

How Mustard Is Grown and Crushed

Mustard is a winter crop that needs little irrigation. Varieties such as Giriraj, RH 725 and Pusa Mustard types are popular. Seed is crushed in traditional expellers (kolhu) to make kachi ghani cold-pressed oil, or solvent-extracted and refined. The leftover mustard cake is a valuable cattle feed and is exported.

Quality and Price Drivers

Mustard seed is traded on oil content (often 42 per cent basis) and moisture. Kachi ghani oil buyers want strong pungency, which comes from fresh, well-dried seed. Prices depend on the Rajasthan crop, edible oil import duties, and world rapeseed and palm oil prices. NAFED buys at MSP when prices fall below it.
