Kachi ghani mustard oil is the pungent cooking oil of North and East India, and mustard cake is a valuable cattle feed.
How It Is Made
Mustard seed is cold-pressed in kolhus or expellers for kachi ghani oil, or solvent-extracted and refined. The cake left after pressing is sold as feed or exported as de-oiled meal.
Uses and Buyers
Households, pickle makers and restaurants in the north and east; dairy farmers buy the cake.
Quality and Standards
Kachi ghani oil is valued for pungency (allyl isothiocyanate content). Blending mustard oil with other oils has been prohibited. Food products must meet FSSAI standards and labelling rules; many are also sold under the AGMARK grading mark, and exporters follow the buying country's rules on residues and contaminants.
Trade and Exports
Bharatpur, Alwar, Jaipur, Morena and Kolkata have many mustard oil mills.
