Garlic: Malwa's Pungent Crop

India is the world's second-largest garlic producer. The Malwa plateau of Madhya Pradesh and the Hadoti region of Rajasthan grow most of it, and garlic prices there are watched by traders across the country.

Where Garlic Is Grown

Madhya Pradesh grows the largest crop in Mandsaur, Neemuch, Ratlam, Ujjain, Shajapur and Indore. Rajasthan's Kota, Baran, Jhalawar and Chittorgarh follow. Gujarat (Jamnagar, Rajkot, Junagadh), Uttar Pradesh and Punjab also grow garlic. The hills of the Nilgiris and Kodaikanal grow a strong, long-keeping garlic; Kodaikanal Malai Poondu holds a GI tag.

How Garlic Is Grown and Traded

Garlic is planted from cloves after the monsoon and harvested in spring. After curing, the bulbs are graded by size: large-bulb types such as G-282 (Yamuna Safed-3) fetch the best prices, while small local garlic (desi or "lahsun") is cheaper but more pungent. Well-cured garlic stores for six to eight months, so farmers and traders hold stock and sell through the year. Exporters ship to Bangladesh, Malaysia, the Gulf and Nepal.

Quality and Price Drivers

Garlic is graded by bulb diameter (from about 20 mm to over 45 mm), clove size, firmness and skin colour. Big-bulb Ooty and G-282 types fetch the highest prices. Garlic prices are notoriously cyclical: a high-price year leads to heavy planting and a crash the following year. Chinese garlic, which India restricts, has at times entered through neighbouring countries and affected prices.
