Cabbage and Cauliflower: Winter Vegetables, Now Year-Round

Cabbage and cauliflower (gobhi) are the winter vegetables of North and East India. New heat-tolerant hybrids and hill-state crops now supply them through most of the year, and India is the second-largest producer of both in the world.

Where and How They Are Grown

West Bengal leads in both crops, followed by Odisha, Bihar, Madhya Pradesh, Gujarat, Jharkhand, Haryana and Uttar Pradesh. Seedlings are transplanted from nurseries. Indian cauliflower is grouped into early, mid and late (snowball) types by the temperature they need to form curds. In summer and the monsoon, supply comes from the hills of Himachal Pradesh (Solan, Shimla, Kullu) and Uttarakhand, and from Karnataka and Maharashtra plateaus, which is when prices are highest.

Uses and Value Chain

Both are sold fresh through vegetable APMCs. Cauliflower is a favourite for aloo gobi, parathas and pickles in the north; cabbage is widely used in salads, fast food and Chinese-style dishes. Small volumes are processed into frozen florets and dehydrated vegetables.

Quality and Grading

Cauliflower curds should be compact, white and free from yellowing or riceyness; cabbage heads firm and heavy for their size. Off-season produce from the hills fetches much higher prices than winter plains produce.

Price Drivers

In peak winter, prices often fall so low that farmers leave crops unharvested. In the monsoon, when plains supply stops and hill crops are disrupted by landslides and rain, prices rise sharply.
