Quality and Price Notes
Both are sold fresh through vegetable APMCs. Cauliflower is a favourite for aloo gobi, parathas and pickles in the north; cabbage is widely used in salads, fast food and Chinese-style dishes. Small volumes are processed into frozen florets and dehydrated vegetables.
Cauliflower curds should be compact, white and free from yellowing or riceyness; cabbage heads firm and heavy for their size. Off-season produce from the hills fetches much higher prices than winter plains produce.
In peak winter, prices often fall so low that farmers leave crops unharvested. In the monsoon, when plains supply stops and hill crops are disrupted by landslides and rain, prices rise sharply.
