Potato: India's Most Stored Vegetable

India is the world's second-largest potato producer. Almost the whole crop is dug in a few weeks of February and March, so India's potato economy runs on cold storage: thousands of cold stores in Uttar Pradesh, West Bengal and Gujarat release potatoes month by month until the next harvest.

Where Potato Is Grown

Uttar Pradesh grows the largest crop, with the Agra belt (Agra, Firozabad, Mathura, Aligarh, Hathras) and Farrukhabad, Kannauj and Etawah as the main districts. West Bengal (Hooghly, Bardhaman, Bankura, Paschim Medinipur) and Bihar (Nalanda, Patna) follow. Gujarat, especially Banaskantha around Deesa, grows high-yielding processing potatoes. Madhya Pradesh (Indore, Ujjain, Dewas), Punjab (Jalandhar, Hoshiarpur, Kapurthala, the main seed-potato area) and Haryana follow. Hill states grow summer potatoes.

How Potato Is Grown and Stored

Potato is planted from seed tubers in October–November and harvested after 90–120 days. Seed quality decides yield, so certified seed from Punjab, hill states and tissue-culture labs is valuable. Most of the crop goes straight into cold stores at 2–4°C for table potato, or at warmer temperatures with sprout control for processing potato, because cold makes potatoes sweet and dark when fried. Varieties include Kufri Jyoti, Kufri Bahar, Kufri Pukhraj for table use and Kufri Chipsona, Lady Rosetta, Santana and Innovator for chips and fries.

January to March; most goes into cold storage.

April to November; prices usually rise from August.
