Where Ginger Is Grown
Karnataka (Shivamogga, Hassan, Kodagu, Mysuru) has become the biggest fresh-ginger state. Assam, Meghalaya, Mizoram, Sikkim and Arunachal Pradesh grow much of India's ginger, largely organic. Kerala (Wayanad, Idukki) is the traditional home of dry ginger. Odisha, Madhya Pradesh and West Bengal also grow it.
How Ginger Is Grown and Processed
Ginger is planted from rhizome pieces before the monsoon and harvested after eight to ten months for dry ginger, or earlier for fresh vegetable ginger. Rhizome rot is the main disease. For sonth, rhizomes are peeled, washed and sun-dried; Kochi is the main trading centre. Processors extract ginger oleoresin and oil for drinks, food flavouring and medicine.

Quality and Grading
Fresh ginger is graded by rhizome size, plumpness, skin cleanliness and freedom from rot. Dry ginger is graded by colour, peeling and fibre content; well-peeled, bold Cochin ginger fetches the best prices. Organic ginger from the Northeast must carry certification for export.
Price Drivers
Ginger prices swing widely. A good price one year encourages heavy planting the next, which often leads to a crash. Rhizome rot in wet years and demand from processors and exporters also move prices. Karnataka's large fresh-ginger crop now sets much of the national price.
