The main ginger districts of Kerala are Wayanad, Idukki, Palakkad. Kerala is India's leading producer of natural rubber and coconut, and the traditional home of the spice trade. Fresh ginger is graded by rhizome size, plumpness, skin cleanliness and freedom from rot. Dry ginger is graded by colour, peeling and fibre content; well-peeled, bold Cochin ginger fetches the best prices. Organic ginger from the Northeast must carry certification for export.
Ginger prices swing widely. A good price one year encourages heavy planting the next, which often leads to a crash. Rhizome rot in wet years and demand from processors and exporters also move prices. Karnataka's large fresh-ginger crop now sets much of the national price.
