Green Chilli: Fresh Heat for Every Kitchen

India is the world's largest chilli producer. Part of the crop is picked green and sold fresh in vegetable markets every day; the rest ripens red and is dried for the spice trade centred on Guntur. Fresh green chilli is also a steady air- and sea-freight export to the Gulf and Europe.

Where Green Chilli Is Grown

Green chilli comes from Andhra Pradesh and Telangana (Guntur, Khammam, Warangal), Karnataka (Haveri, Dharwad, Ballari), Maharashtra (Nandurbar, Jalgaon, Kolhapur), Madhya Pradesh (Khargone, Dhar), Gujarat (Anand, Kheda, Surat) and West Bengal, as well as from peri-urban farms around every big city. Gujarat's long, mild Jwala chilli and the thick-skinned bhavnagari types are favourites for pickles and bhajji.

How It Is Grown and Sold

Chilli is transplanted from nurseries and picked many times over three to five months. Thrips, mites and viral leaf curl are the main pests, and pesticide residues are the biggest hurdle for exports, so export growers follow strict spray schedules. Fresh chilli is sold in crates or sacks to commission agents in the APMCs; exporters pack it in cartons for air or reefer shipment.

Quality and Price Drivers

Buyers grade green chilli by length, colour, pungency and freshness. Exporters need straight, unblemished pods with stalks, packed within hours of picking. Prices rise in the peak monsoon when rain damages crops and transport is disrupted, and fall in winter when supply from many states overlaps.
