Where Urad Is Grown
Madhya Pradesh (Tikamgarh, Chhatarpur, Damoh, Sagar) and Uttar Pradesh (Bundelkhand: Lalitpur, Jhansi, Hamirpur) grow large kharif crops. Maharashtra (Latur, Osmanabad), Rajasthan and Jharkhand follow. In the south, the Krishna and Godavari deltas of Andhra Pradesh and the Cauvery delta of Tamil Nadu grow rabi urad after paddy, using residual moisture; this bold, shiny urad is highly valued by idli and papad makers.
How Urad Is Grown and Sold
Urad is a 70–90 day crop, sensitive to waterlogging and yellow mosaic virus. Mills sell whole urad, urad chilka and urad gota/dhuli (skinned). South Indian batter makers want urad that gives soft, fluffy idlis, so variety and origin matter. Papad makers in Bikaner, Amritsar and Gujarat buy urad flour in bulk.

Quality and Price Drivers
Urad is graded by size, colour (black, shiny grain is preferred), freedom from weevils and the "fluffiness" it gives in batter. Prices depend on the Indian kharif and rabi crops, Myanmar supply and the kyat exchange rate, Indian import policy and government stock limits. Idli, dosa and papad makers buy steadily all year, which keeps demand firm.
