Defatted soy flour is extruded under heat and pressure into chunks, granules or mini-chunks, then dried.

Food products must meet FSSAI standards and labelling rules; many are also sold under the AGMARK grading mark, and exporters follow the buying country's rules on residues and contaminants.

Most soya chunks are made near soybean plants in Madhya Pradesh and Maharashtra and sold nationwide; some are exported.
