What It Is
Dalia (broken or cracked wheat) is a quick-cooking breakfast and health food, and wheat bran is the outer layer separated in milling. Both are important by-products of the wheat trade.
How It Is Made
Dalia is made by cleaning, sometimes lightly roasting, and cracking whole wheat into coarse pieces, then sieving by size. Bran comes off the rollers in flour mills and is sold as a separate stream.

Dalia is bought by households, hospitals and breakfast-cereal brands; bran goes mostly into cattle and poultry feed, and a small share into high-fibre foods.
