What It Is
Atta is whole-wheat flour, the base of the roti, chapati and paratha eaten daily across North, West and Central India. Packaged atta has grown into one of India's biggest branded food categories, while loose atta from local chakkis still feeds millions of households.
How It Is Made
Wheat is cleaned, conditioned with a little water, and ground whole. Traditional chakkis use stones; modern "chakki-fresh" plants use rollers or stone-like grinders that keep the bran and germ in the flour. Millers blend wheat from Madhya Pradesh, Punjab, Haryana, Uttar Pradesh and Rajasthan to get consistent dough quality, colour and taste.
Uses and Buyers
Households, restaurants, caterers and roti-making machines in institutional kitchens. Speciality atta made from Sharbati wheat, multigrain blends with millets, and high-fibre atta command premium prices.
Quality and Standards
Buyers judge atta by water absorption, softness of rotis, colour, gluten strength and freshness. Food products must meet FSSAI standards and labelling rules; many are also sold under the AGMARK grading mark, and exporters follow the buying country's rules on residues and contaminants.
Trade and Exports
Indian atta is exported to the Gulf, UK, USA, Canada and Australia for the Indian diaspora. Wheat-product exports, including atta, were made free again in August 2026 after restrictions since 2022.
