Millet flours, flakes, cookies, noodles, pasta and ready mixes have grown into a new food industry since the International Year of Millets in 2023 and the government's Shree Anna push.
How It Is Made
Millets are cleaned, de-stoned, sometimes dehulled, and milled into flour, or flaked, puffed and extruded into snacks and pasta. Because millet flours turn rancid quickly, brands use heat treatment, nitrogen packing or mill-to-order systems.
Uses and Buyers
Health-conscious households, children's food, diabetic diets, gluten-free buyers, school meals and export markets.
Quality and Standards
Food products must meet FSSAI standards and labelling rules; many are also sold under the AGMARK grading mark, and exporters follow the buying country's rules on residues and contaminants.
Trade and Exports
Millet foods are exported to the Gulf, USA, UK and Europe, with APEDA promoting millet exports. Start-ups incubated at ICAR-IIMR in Hyderabad are an important part of the industry.
Where the Raw Material Comes From
