The traditional Delicious group (Royal Delicious, Red Delicious, Golden Delicious) still dominates Kashmir and Himachal, with Ambri, Maharaji and other local types. Apples are graded by size, colour and blemish and packed in universal cartons, which have replaced the old wooden boxes in Himachal. CA-stored apples must be firm and crisp when they come out in spring. Scab, hail and premature leaf fall are the main quality risks.
The size of the Kashmir crop, road closures on the Jammu–Srinagar highway, hail in Himachal, and the volume of imported apples all move prices. Apples from CA stores and imports set prices between March and June.
