How It Is Grown

Cane is planted from setts and harvested after 10–18 months; a ratoon crop grows from the stubble. Jaggery is made by boiling cane juice in open pans until it solidifies.

Quality and Price

Cane is paid by weight with recovery-linked bonuses; jaggery is graded by colour, hardness and purity. Kolhapur jaggery holds a GI tag.
